PW's Perfect Pound Cake

 I have had so many cookie post lately I thought you might enjoy seeing something other than decorated sugar cookies. Although, I did spend most of the weekend baking sugar cookies. I think I made around 300 cookies on Saturday. I did carve out a little time on Sunday between the 100 loads of laundry to get this cake made. I put it in my "to bake" folder last week and it has been calling my name ever since. I saw the recipe on PW's website. I love pound cake and this cake is so flavorful and moist you don't even need a glaze. Now, if you have some strawberries and whip cream that my friend is a different story!!!






The Perfect Pound Cake
  • 3 sticks Butter
  • 3 cups Sugar
  • 5 whole Eggs
  • 1 teaspoon Butter Flavoring
  • 2 teaspoons Lemon Flavoring (I used Princess Cookie & Cake Bakery Emulsion)
  • 3 cups All-purpose Flour
  • 1 cup Sprite, 7-UP, Or Sierra Mist

Preparation Instructions

Preheat oven to 325 degrees.

Cream butter. Add sugar, 1 cup at a time, mixing after each addition. Add eggs, 1 at a time, mixing after each addition. Add butter and lemon extracts and mix well. Add flour, 1 cup at a time, mixing well after each addition. Add soft drink, then mix together until combined. Scrape sides of bowl, then mix briefly.

Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is no longer jiggly.

Remove cake from oven and invert pan until cake drops out. Slice

The finished product looks quite perfect. I think strawberries and whipped cream would be a lovely addition to this pound cake.
