I know - Pineapple Upside Down Cupcakes?!?!?!? I had not heard of them either!!! It is a pretty funny story how they came about........
I was talking to my boyfriend (Aidan) one evening and how I would make cupcakes for his boss to bribe her for early shifts for him when I am in town. He told Amber that I would make cupcakes for her if she scheduled him on the early shifts and she was like OK!!! So, he asked her what flavor she wanted. I assumed that she would pick Chocolate, Vanilla, Red Velvet - you know a "cupcake" flavor. He calls me one evening and told me that she said she wanted Pineapple Upside Down cupcakes. I said, "excuse me - what!?!?" He then tells me that she said "I have never seen anyone make them" - I am thinking me either!!!
So, then it became a challenge and I researched it and this weekend I did a test run before I go to LA to bake them! This is the creation I came up with.......... outcome - SWEET SUCCESS!!! Everyone that tried them loved them!! So, thank you Amber for the sweet inspiration for a new cupcake flavor and the early shifts for my sweetie!!! If you read this I wouldn't be opposed to you throwing in an extra day off either...(preferably Sunday the 21st)

Hi!! It's Amber. I am amazed that you actually followed-thru on my recommendation. You are so sweet to say the least. The cupcakes look amazing. Exactly what I had imagined. Thank you for making the effort to do this!! I just looked at the rest of your baked goods and your amazing. Such a great job on everything!!! I look forward to trying your creation!!!
