Pumpkin Spice Cake with Honey Frosting

This is my first month partcipating in Bridget's Flavor Of The Month......... This month was PUMPKIN!!

A few weeks ago I made this cake for my parents. OMG, It is one of the best cakes I have eaten and will be making it again for Thanskgiving. It is very moist and delicious. I am not the best cake maker, YET!!! I have a problem with knowing just how much batter to put in the pan. As you can see below I did not estimate well and filled them to full! If you have any tip/suggestions on how much batter to put in your pan, please leave a comment below. I used 3 - six inch pans instead of 2 -9 inch pans. I wanted to make a small three layer cake and have enough batter left over for cupcakes!!!

You can make fondant pumpkins to decorate the cake with. I just picked up the candy pumpkins at the store, easy!!!

Pumpkin Spice Cake with Honey Frosting

  • 2 boxes vanilla cake mix, Betty Crocker SuperMoist
  • 2 cups apple juice
  • 3/4 cup vegetable oil
  • 1/2 cup water
  • 1/4 cup honey
  • 3 large eggs
  • 2 tsp pumpkin pie spice
  • 1 cup sour cream

Preheat oven to 350. Spray (9 inch) round cake pans with nonstick baking spray with flour. (I used 3 - 6 inch cake pans and made 14 cupcakes)

In a large bowl combing, cake mixes, juice, oil, 1/2 cup water, and honey. Beat at low speed with an electric mixer until combined. Add eggs, one at a time, beating well after each addition. Add pumpkin pie spice, beating until combined.  Stir in sour cream. Spoon batter evently into prepared pans.

Bake at 25 to 30 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.

Spread Honey Frosting evenly between layers and on top and sides of cake. Garnish with candy pumpkins.


Honey Frosting
  •  cheese frosting, Betty Crocker 
  • 2 tbsp honey
  • 2 cups confectioners' sugar
  • 1 tbsp meringue powder
  • 1/2 tsp pumpkin pie spice

In a large bowl, beat frosting and honey at medium speed with an electric mixer until smooth.  Gradually add confectioners' sugar, beating until combined. Add meringue powder and pumpkin pie spice, beating until slightly thickened. Use frosting immediately.

Yummy Mummy Cupcakes

I found this recipe for Mummy cupcakes in one of my fall magazines. I knew the moment I saw them that I  would be making them for Halloween.  I decided to make them for Makenzie's class!! They will be super excited today to get cupcakes and cookies!!! Makenzie helped frost the cupcakes then I mummified them!!! They are so simple and easy!!!

The mummy was very YUMMY!!!

Yummy Mummy Cupcakes

  • 1 Betty Crocker Chocolate Fudge Cake Mix
  • 2 cans Betty Crocker Creamy White frosting ( you will have extra left over)
  • 1 tube black decorating gel
  • #44 Wilton tip
  • Decorating bag or ziploc bag
Mix/Bake cake according to directions on box. Cool.

Prepare your decorator bag/ziploc bag with coupler and tip and fill with white frosting. Frost cupcakes with a thin layer of white icing. Use decorator bag filled with icing to pipe mummy bandages across top of cupcake. Leave space for black eyes using black decorating gel.

1 cake mix makes 24 mummies.

My not so little pumpkin Makenzie asked me if I would make sugar cookies for each student in her class. Well, of course I could not turn her down!! I think they turned out pretty cute!!!

BOO Birthday Cookies

This past Friday we had a BOO BIRTHDAY BASH for my best friend, Kathy. I made the below BOO cookies for the guest to take home. By the 20th cookie I decided to start trying a few different techniques. The purple was not as dark as I would have liked it but I didn't want to put ALOT of coloring in the icing! Next time I will use Ameri-Color their colors seem to do better than the Wilton. They are not as cute as I hoped for but they sure were YUMMY!!!

S is for Sarah.........

My sweet sweet friend, Sarah and her husband have been trying to conceive for several years. They prayed together and felt the Lord was leading them to adoption. There life book was submitted in August and they were offically waiting!!!

I found out from Sarah a couple of weeks ago that she is PREGNANT!!!! I was soooo excited for her that I had to make her a batch of PINK sugar cookies to share with Baby Martin. Every growing baby needs some SUGAR LOVE!!!

I shippped Sarah's cookies out the same time I shipped the Texas cookies I have been waiting to post until I was sure she received them. I talked to her last night and she is in love with some SUGAR LOVE!!!
